Avocado Shrimp Salad Recipe

Ingredients

Romaine Lettuce, Chopped 1 cup
Shrimp, Uncooked 6 oz
Water 2 Cups
Avocado 1/2
Cup Peas 1/4
Red Onion 1/4
Olive Oil 1 tbsp
Lime Juice 1 tbsp
Garlic, Minced 1 Clove
Chopped Fresh Cilantro 1 tsp
Dijon Mustard 1/2 tsp
Salt 1/8 tbsp
Ground Black Pepper 1/8 tbsp

Avocado Shrimp Salad Directions:

Avocado Shrimp Salad

  1. Add water and a slice of lime to a large stockpot set over medium heat.
  2. Bring to a boil and allow to boil for 5 minutes
  3. Stir in the raw shrimp, cover and remove from heat.
  4. Allow resting for about 4 minutes, until all the shrimp are cooked through.
  5. Pour the shrimp and liquid into a colander to strain, peel and set aside.
  6. In a large bowl, add chopped romaine, avocado, tomatoes, red onion, peas shrimp and cilantro.
  7. In a small bowl, whisk together olive oil, lime juice, garlic, Dijon, salt, and pepper.
  8. Pour dressing over salad and toss.
