Buffalo wings
Chicken | 2 pounds | |
Butter or margarine | 4 tbsps. | |
Hot pepper sauce | 5 tbsps. | |
Salt and pepper to season | ||
Oil for deep frying | ||
Celery sticks | 12 | |
Blue cheese dressing | 1 cup |
Directions
- Cut off the wing tips and toss them in the trash or save them for stock. At the joint, cut the wings into two parts.
- In a saucepan, combine the butter, hot pepper sauce, salt, and pepper and bring to a boil, whisking constantly. Remove the pan from the heat and set it aside.
- In a big, deep pot or deep fryer, heat the oil to 375°F. In small batches, deep fry the chicken wings until they are cooked through and crispy on the outside, around 4 to 5 minutes. Remove to a baking pan lined with paper towels and keep warm in a 200°F oven while you deep fry the rest.
- In a big mixing bowl, pour the sauce. Toss the fried chicken wings with the sauce in the mixing bowl. Serve with celery sticks and blue cheese dressing right away.
