For the Dressing

Dijon Mustard1/4 tsp
Honey1/4 tsp
Lemon Juice1/2 tbsp
Clove Garlic, Minced1
Salt1/4 tsp
Pinch of Pepperon your taste
Olive Oil1 tsp

For the salad

Can Chickpeas, Drained and Rinsed1/4 Cup
Chopped Romaine Lettuce1 Cup
Fresh Baby Spinach Leaves1 Cup
Hard Boiled Eggs2
Cherry Tomatoes, Halved5
Avocado, Cubed1/3
Crumbled Feta Cheese1 tbsp
Raw Walnuts, Chopped1 tbsp
Green Onion1/4 tbsp
Minced Fresh Parsley1/4 tbsp

Green Salad with Boiled Eggs

Method

  1. Add all the dressing ingredients to a small bowl.
  2. Whisk until combined.3: Add the romaine and spinach to a serving plate.
  3. Top (in rows if desired) with the chickpeas, eggs, tomatoes, avocado, feta, walnuts, green onion, and parsley.
  4. Drizzle with the desired amount of dressing and serve immediately.
