What makes red velvet cake different?

This cake is made with a little magical trick: the chemical reaction between buttermilk, vinegar and cocoa powder give it deep maroon color (though people often try to enhance it with food coloring).
Is a red velvet cake just a chocolate cake?
It is not. The difference between them is that chocolate cake would never have the same maroon color, even if you added food coloring. Also it has a subtle acidic taste additionally to chocolate flavor.
