Herb pork loin and mashed potatoes recipe

Herb pork loin and mashed potatoes

Herb Dry Seasoned Loin Filet1 (1.5-pound)
Mashed Potatoes1 (20-ounce)
jar pork gravy1 (12-ounce)
chopped fresh parsley leaves ½ cup
chopped fresh rosemary leaves2 tsps.
chopped fresh thyme leaves2 tsps.

Directions

  1. Cook pork according to package directions. Let stand 10 minutes and slice.
  2. Heat potatoes according to package directions.
  3. In a small saucepan, heat gravy over medium heat. Stir in herbs and cook 2 to 3 minutes or until fragrant; strain through a fine wire mesh strainer.
  4. Spoon potatoes onto a serving platter. Top with pork slices.
