Herb pork loin and mashed potatoes recipe

Herb pork loin and mashed potatoes

Herb Dry Seasoned Loin Filet 1 (1.5-pound)
Mashed Potatoes 1 (20-ounce)
jar pork gravy 1 (12-ounce)
chopped fresh parsley leaves  ½ cup
chopped fresh rosemary leaves 2 tsps.
chopped fresh thyme leaves 2 tsps.


  1. Cook pork according to package directions. Let stand 10 minutes and slice.
  2. Heat potatoes according to package directions.
  3. In a small saucepan, heat gravy over medium heat. Stir in herbs and cook 2 to 3 minutes or until fragrant; strain through a fine wire mesh strainer.
  4. Spoon potatoes onto a serving platter. Top with pork slices.
