Herb pork loin and mashed potatoes
|Herb Dry Seasoned Loin Filet||1 (1.5-pound)|
|Mashed Potatoes||1 (20-ounce)|
|jar pork gravy||1 (12-ounce)|
|chopped fresh parsley leaves||½ cup|
|chopped fresh rosemary leaves||2 tsps.|
|chopped fresh thyme leaves||2 tsps.|
- Cook pork according to package directions. Let stand 10 minutes and slice.
- Heat potatoes according to package directions.
- In a small saucepan, heat gravy over medium heat. Stir in herbs and cook 2 to 3 minutes or until fragrant; strain through a fine wire mesh strainer.
- Spoon potatoes onto a serving platter. Top with pork slices.
