Ham Potato Pancakes
mashed potatoes | 1 cup | |
milk | 1 cup | |
large egg, lightly beaten | 1 | |
baking mix | 1¾ cup | |
finely chopped Boneless Ham | 1 cup | |
kosher salt | 1 tsp. | |
butter, melted | 1 tbsp. | |
chopped fresh chives | 2 tbsps. |
Directions
- Whisk together mashed potatoes, milk, and egg in a medium mixing cup. Toss in the baking mix, ham, and salt until well combined. Fold in the butter and chives gently.
- Preheat the griddle to medium. Using a ¼ cup, drop the batter. Cook until golden brown on both sides. Cook until cooked through on the other hand. Serve with sour cream on the side.
