Why do you put lemon juice in a strawberry jam?
The lemon juice lowers the pH of the jam mixture, which also neutralizes those negative charges on the strands of pectin, so they can now assemble into a network that will “set” your jam
Can you make jam with normal sugar?
Coarse-grain white granulated sugar is best for jam-making as it ensures a good clear jam, but fine caster sugar can also be used. The coarse grains dissolve more slowly and evenly, giving a better result. Granulated sugar with added pectin is also available, but it shouldn’t be necessary to use this.
How long does homemade strawberry jam last?
For homemade jams made using sugar and processed by canning in a hot water bath, you can expect to get about two years of shelf life when stored in a cool, dry place. Once opened, keep your homemade jam in the refrigerator for up to three months
Is strawberry preserves the same as strawberry jam?
In jam, the fruit comes in the form of fruit pulp or crushed fruit. This makes jam less stiff than jelly. In preserves, the fruit comes in the form of chunks in a gel or syrup. Preserves will have more fruit in them than jam will.
