Fish tacos recipe

For Fish tacos

small white corn tortillas24
tilapia1 1/2 lb.
ground cumin1/2 tsp
cayenne pepper1/2 tsp
salt1 tsp
black pepper1/4 tsp
Olive oil1 tbsp.
Butter1tsp

Fish Taco Toppings

purple cabbage1/2 small
avocado sliced2 medium
roma tomatoes diced (optional)2
diced red onion1/2
bunch Cilantro longer stems removed1/2
Cotija cheese, grated4 oz 1 cup
lime cut into 8 wedges to serve1

Directions

  1. Using parchment paper or a silicone baking mat to line a large baking sheet. Combine seasonings in a small dish: Sprinkle 1/2 tsp cumin, 1/2 tsp cayenne pepper, 1 tsp salt, and 1/4 tsp black pepper evenly over both sides of the tilapia.
  2. Drizzle olive oil over the fish and dot each piece with butter. Preheat oven to 375°F and bake for 20-25 minutes. If necessary, broil for 3-5 minutes at the end to brown the edges.
  3. In a medium mixing cup, whisk together all of the ingredients for the taco sauce.
  4. To make the tacos, toast the corn tortillas in a large dry skillet or griddle over medium/high heat for a few minutes.
  5. To put it together, start with the tuna, then add the rest of the ingredients, finishing with a generous sprinkle of cotija cheese and that amazing taco sauce! Serve tacos with a lime wedge to squeeze over them.
