minced garlic 1 tablespoon
dry mustard 2 teaspoons
chopped fresh rosemary leaves 1 tablespoon
chopped fresh thyme leaves 1 teaspoon
kosher salt 2 teaspoons
freshly ground black pepper 1 teaspoon
good olive oil 2 tablespoons
freshly squeezed lemon juice 2 tablespoons
dry white wine 1 cup
chopped fresh sage leaves 1 tablespoon

This easy recipe is followed by 3 easy steps:

Step one

Preheat oven at 325F and place turkey on a rack over a roasting pan.

Step two

Take a bowl and mix garlic, mustard, herbs, salt, pepper, and lemon juice. This makes a thick paste. Now use your hands to loosen the skin and smear half of the paste on the meat directly. Spread the remaining paste evenly on the skin. Now pour wine on the bottom of the roasting pan.

Step three

Roast turkey for 2 hours or until golden brown. If the breast is over-browning cover it with aluminum. When the turkey is bake cover it with foil and leave at room temperature for 15 minutes. Slice and serve with pan juices.

Set the oven at 350 degrees. If the turkey breast is wrapped in netting, cut the string from the top (skin side) of the breast leaving all but the two ends uncovered, and roast for 45 minutes.

    Rosemary and olive oil is one of my favorite flavor combinations that I only recently discovered. After I graduated from college, I got my own place and started cooking for myself. This is where I made my discovery. Since then I have done it on so many different plates but I have yet to try it on turkey. I know it goes great with chicken so I am going to have to give this a try this week!
