Mixed Nut Oat Bars

Mixed Nut Oat Bars
Our mixed nut oat bars are sweet, easy to prepare and far healthier than store-bought! Packed with healthy fats and protein this is a guilt-free snack recipe that can be enjoyed by the whole family. Store the bars in an airtight container then grab a bar for on-the-go.
DIRECTIONS
- Into a mixing bowl add the dates then pour over warm water to cover, allow the dates to soak for 10 minutes.
- After 10 minutes remove the dates from the water and transfer to a food processor. Then add the honey, peanut butter, cocoa powder, cinnamon powder, and vanilla extract. Blend in the food processor until smooth and combined.
- Remove the date mixture and transfer to a mixing bowl along with the chopped nuts and oats. Mix well until the ingredients are completely combined.
- Line a 9”x9” baking tray with parchment paper then pour in the nut and oat mix. Smooth down with a spatula ensuring that the mixed nut oat bar mix is compact.
- Place the baking tray into the refrigerator and chill for at least 30 minutes.
- After chilling, tip the block of nuts and oats onto a chopping board. Remove the parchment and slice into 12 uniform bars.
- Store the mixed nut oat bars in an airtight container in the fridge or freezer and enjoy it as a quick and easy on-the-go snack.
