Potato and Tuna Salad with Pesto Dressing

Ingredients

Baby Potatoes, Halved4
Pesto1/2 tbsp
Olive Oil1 tsp
Grape or Cherry Tomatoes8
Can Tuna in Water, Drained4 oz
Green Beans, Halved (Boiled or Canned)2 oz
Spinach1/2 oz

Pesto Ingredient

Fresh Basil Leaves1/2 cup
Small Clove Garlic, Peeled1
Pine Nuts2 Tablespoons
Freshly Grated Parmesan1/4 Cup
Olive Oil2 tbsp
Salt and Freshly Ground Black Pepper, to Taste

Potato and Tuna Salad with Pesto Dressing Directions

Potato and Tuna Salad

  1. 1:Boil the potatoes in a medium saucepan of salted water, and simmer for 8-10 minutes until they are tender enough to pierce with a fork.
  2. In a large bowl, flake tuna with a fork, then add the potatoes, green beans, spinach, grape tomatoes.
  3. In a small bowl, mix the pesto and oil to make a dressing, drizzle with the pesto and gently toss everything together.
