Potato and Tuna Salad with Pesto Dressing

Baby Potatoes, Halved | 4 | |
Pesto | 1/2 tbsp | |
Olive Oil | 1 tsp | |
Grape or Cherry Tomatoes | 8 | |
Can Tuna in Water, Drained | 4 oz | |
Green Beans, Halved (Boiled or Canned) | 2 oz | |
Spinach | 1/2 oz |
Pesto Ingredient
Fresh Basil Leaves | 1/2 cup | |
Small Clove Garlic, Peeled | 1 | |
Pine Nuts | 2 Tablespoons | |
Freshly Grated Parmesan | 1/4 Cup | |
Olive Oil | 2 tbsp | |
Salt and Freshly Ground Black Pepper, to Taste |
Potato and Tuna Salad with Pesto Dressing Directions
- 1:Boil the potatoes in a medium saucepan of salted water, and simmer for 8-10 minutes until they are tender enough to pierce with a fork.
- In a large bowl, flake tuna with a fork, then add the potatoes, green beans, spinach, grape tomatoes.
- In a small bowl, mix the pesto and oil to make a dressing, drizzle with the pesto and gently toss everything together.
