Beef with mashed cauliflower
|Small Head Cauliflower||1|
|Marmesan Cheese||2 tbsp|
|Salt and Black Pepper|
|Olive oil||1 tsp|
|Medium Red Onion||1/4|
|Tomato Paste||1 tsp|
|Diced Tomatoes||3 oz|
|Low Sodium Beefbroth||3 tbsp|
Beef with mashed cauliflower Directions:
1: Break the cauliflower into florets.
2: Add it to the steamer basket.
3: Steam 7 minutes, or until cauliflower is tender.
4: Add the cauliflower in food a processor.
5: Add milk, cheese, salt, and black pepper and blend until it’s as creamy as you prefer.
6: Transfer to a Plate.
7: Meanwhile, in a large skillet, heat oil over medium-high heat.
8: Add meat with salt and pepper; add carrot, onions, garlic.
9: Cook and stir until golden brown, 4-6 minutes.
10:Add tomato paste; tomatoes, broth, and seasonings.
11:Cook, covered, on low until tender, 5-7 minutes.
12:Serve with mashed cauliflower , sprinkle with fresh thyme.
